While this technology is not new (nature invented it) it is how we have developed the application to industry. Il Birrificio Sottobisio e' nato nel 2013 da una idea dei proprietari della Bioadventures SA di Balerna. L'amministratore delegato di questa societa' e' infatti un giovane Biotecnologo Industriale particolarmente esperto di enzimi e, come si sa, alla base della Birra vi e' proprio l'attivita' di queste macchine molecolari che fino a pochi anni fa venivano utilizzate in modo del tutto empirico e per lo piu' senza sapere il perche' avvenivano certe reazioni e in quali condizioni specifiche di temperatura. La Missione che si e' dato il Birrificio Sottobisio e' quella di elaborare dei prodotti di qualita' estrema dove il risultato finale sia ottenuto dalla conoscenza dettagliata sia qualitativa che quantitativa delle reazioni che avvengono nel processo di Mashing e in quello di Fermentazione. Per poter controllare e rendere ripetibili questi processi, la Bioadventures ha dotato il Birrificio di attrezzature commissionate sulla base di specifiche non standard ad un'industria italiana di Possagno (TV), la BBC. L'impianto consente la realizzazione di batch di 600 litri ed e' stato concepito con una serie di accorgimenti al fine di essere particolarmente efficiente dal punto di vista energetico. L'impianto e' controllato da un software di ultima generazione che gestisce un sistema a olio diatermico invece del classico sistema a vapore. Anche i processi di Fermentazione sono perfettamente controllati in temperatura in modo da sfruttare al meglio i lieviti che di volta in volta si decide di utilizzare. Nel nostro birrificio vengono prodotte Birre di tipo Ale che, a differenza della classica tipologia Lager comunemente in commercio, sono caratterizzate da una personalita' molto piu' sofisticata in quanto questa tecnica consente di produrre aromi e gusti del tutto irraggiungibili a quest'ultima.
