Ubicato sopra un promontorio gode di una vista a 360 gradi sui propri antichi uliveti e vigneti, il Castello di Velona, partner di Virtuoso, fu edificato come fortilizio medievale nell’XI secolo. Il Castello ha un totale di 24 camere e 21 suite, e sono state progettate secondo due concept differenti: Monumental Rooms (hanno un arredamento tipico toscano, legato allo stile originale del Castello) e Camere UNESCO View (arredamento contemporaneo, tutte possiedono un patio / giardino privato con vista mozzafiato al tramonto e l'acqua termale calda naturale direttamente dal rubinetto dedicato della loro vasca da bagno). La OLISPA è un’oasi di puro relax che si estende su una superficie di 1500 mq dove domina il travertino toscano in un ambiente lineare e raffinato. L’ acqua termale che sgorga a 85° arriva direttamente dal Monte Amaiata, vulcano oramai spento (ultima eruzione 180k anni fa) e fatta sgorgare direttamente all’ interno del Castello e nei bagni delle camere Unesco View. Al Castello sono presenti n° 3 ristoranti di cui 2 aperti contemporaneamente alcuni giorni a cena, e la Dolce Vita Pool Restaurante, situata all’ esterno zona piscina è aperto solo per pranzo. Per la cena si può scegliere tra il Settimo Senso con Menù alla carta e grande selezioni di Carni frollare, ed il Brunello, in cui lo chef Riccardo Bacciottini, che arriva dal ristorante stellato Noma di Copenaghen (René Redzepi) per 5 anni il miglior ristorante del mondo, ha preparato n° 2 Menù degustazioni da 5 e 7 portate con richiami a prodotti locali il primo (Amiata), e nazionali/internazionali il secondo (Contaminazione).
