Początki toruńskiej wytwórni spirytusu owiane są tajemnicą. Już w latach ’50 XIX wieku w toruńskiej dzielnicy Mokre produkowano spirytus na skalę półprzemysłową. Początek naszemu zakładowi dali żydowscy przedsiębiorcy Georg i Natan Hirschfeldowie. Nowoczesny, jak na tamte czasy, zakład produkcji spirytusu przy dzisiejszej ulicy Olbrachta otworzono w 1884 roku i datę tę przyjmuje się jako początkową. Produkowane tam alkohole były znane nie tylko w Europie, ale trafiały też do Afryki i do Azji. Były też wielokrotnie nagradzane na międzynarodowych wystawach w Melbourne, Grazu czy w Królewcu. W 1890 roku zakład przejął Wolf Sultan, toruński potentat w dziedzinie produkcji spirytusu, wielbiciel literatury i dobrych trunków. Sultan kontynuował dynamiczny rozwój wytwórni, po czym zakład został przejęty w 1919 roku przez gdańskiego kupca Hermana Winkelhausena, który był już wcześniej właścicielem fabryki spirytusu w Starogardzie Gdańskim. W ramach nacjonalizacji przemysłu spirytusowego w 1925 roku toruński zakład rektyfikacji spirytusu stał się własnością skarbu państwa i od tej pory funkcjonował pod szyldem Polmosu. II Wojna Światowa nie spowodowała zniszczeń zakładu, dzięki czemu do dnia dzisiejszego można podziwiać zakładowe budynki, będące przykładem dobrze zachowanej XIX-wiecznej architektury przemysłowej. Po wojnie wznowiono produkcję, a wizytówką toruńskiego zakładu był wysokiej jakości spirytus, który wykorzystywany był także przez Polmosy w innych miastach. W 1995 roku zmodernizowano urządzenia rektyfikacyjne i zaprzestano używania węgla na terenie zakładu, dzięki czemu stał się on bezpiecznym dla środowiska. Na terenie wytwórni znajdują się ujęcia krystalicznie czystej wody głębinowej, która wydobywana jest z pokładów kredowych posadowionych na głębokości 220 metrów. W 2014 roku, pod szyldem Toruńskich Wódek Gatunkowych, zakład wszedł w kolejny etap rozwoju i wraz z nową nazwą stworzyliśmy serię wyjątkowych produktów, które osadzone są w naszej tradycji i wyróżniają się wysoką jakością i wyrafinowanym smakiem. Stoją za nami doświadczenia wielu pokoleń, które wykorzystujemy do tworzenia trunków wyjątkowych. Sama nasza wytwórnia to kompleks historycznych, ponad stuletnich budynków, które wciąż służą w procesie produkcyjnym i są żywym muzeum historii polskiego przemysłu spirytusowego.
