Il est celui qui a fait monter le Sud Ouest à Paris. De la rue Saint-Dominique dans le 7e arrondissement de la capitale, il a fait son jardin. L’endroit rêvé pour planter ses racines : au 135 avec le Violon d’Ingres (1 étoile) et les Cocottes et au 139 avec le Café Constant. « Il faut se rappeler d’où l’on vient », martèle-t-il avec son timbre de voix si chantonnant. Il ne l’a pas oublié en faisant sortir de terre son quatrième établissement, le Bibent, place du Capitole à Toulouse. Et plus près encore de sa ville natale, avec son dernier né, le Bistrot Constant, véritable havre de paix en bordure du canal de Montech. A 65 ans, « Monsieur Constant » comme on l’appelle dans le milieu – s’est fait un prénom avant un nom. Il fut le maestro du piano au Crillon, place de la Concorde, qu’il abandonna après sept ans d’une partition sans fausse note en 1996 pour s’ouvrir les portes d’une seconde vie. Celle d’un homme épanoui dont le style n’a jamais changé : « le canaille allié au chic », pourrait-on oser pour le résumer. Les assiettes de Christian Constant ne mentent pas, elles disent vraies, respirent l’authentique, fleurent les bons produits et exhalent la philosophie du « mangez bon ». « Je préfère par dessus tout l’originel à l’original », glisse-t-il dans une formule qui lui va si bien. On construit toujours son futur sur son passé en prenant le soin de bien le conjuguer au présent. Christian Constant fut un formidable « papa en cuisine », à la tête d’une constellation de talents : Eric Frechon (3 étoiles), Emmanuel Renaut (3 étoiles), Jean-François Rouquette (1 étoile), Yves Camdeborde, Christian Etchebest, Thierry Faucher, Thierry Breton…
